Protein evolution describes the changes over time in the shape, function, and composition of protein. Not all areas within a protein mutate at the same rate; functionally important regions mutate more slowly and amino acid substitutions involving similar amino acids occur more often than dissimilar substitutions. Overall, the level of polymorphisms in proteins seems to be fairly constant. Several species (such as humans, mice, and fruit flies) have similar levels of protein polymorphism.
